I didn't visit Tokyo, I worked there - three years learning from some of the most incredible chefs. There's a lot of simplicity in Japanese food, but also a lot of tradition and skill; something as simple as a piece of nigiri takes years to learn. Start with yakitori - you can't talk street food without it - then a tiny ramen room and a seasonal cocktail omakase.
