    15 asparagus spears

Method

    Trim the woody ends from the asparagus spears.

    Bring a medium saucepan of salted water to a boil.

    Add the asparagus to the boiling water and cook for 2–3 minutes, depending on thickness, until just tender and bright green.

    Immediately transfer the asparagus to a bowl of ice water using a slotted spoon. Let sit for 1–2 minutes to stop the cooking process.

    Drain and pat dry. Serve warm or at room temperature, or use in your desired dish.

Tips

    For extra flavour, toss finished asparagus with a little olive oil, lemon zest, or shaved parmesan.

    Avoid overcrowding the pot — blanch in batches if necessary.
