How to make Gruyère Gougères
Gougères are French cheese puffs made from choux pastry—light, golden, and unapologetically cheesy. The dough starts with a roux, then gets beaten with eggs - which are added gradually - and finished with a generous handful of grated cheese. Piped (or spooned) into bite-sized mounds and baked until puffed and golden, they’re an elegant appetiser, but no more difficult than making a white sauce.
