Fallow started in May 2019 with Jack Croft and William Murray, who are chefs, and James Robson, who is a business expert. They combined their skills to create Fallow, where they mix innovative cooking with hospitality. Their first few pop-up events were so popular they sold out. This success led them to become a top restaurant concept in the UK. In November 2021, they found a permanent spot in St James's market.
