Situated just outside of Kent, amidst grassy bushland and a stone's throw from the North Sea, the pub sources its fresh oysters, fish and seaweed used for stocks and sauces from the nearby surroundings. The dishes are thoughtful, hearty and distinctly British, with everything crafted in-house and by hand, making use of their kitchen garden that surrounds the venue.

"Stephen Harris I first heard about this place from a couple of chefs in the changing rooms at Tetsuyas. They spoke of a place in England where they make their salt to cure their pigs to use for the restaurant, it's in an old pub and the food is proper. Now I don't want to make this sound like I'm a regular of the place or sound like Al Murreys Pub Landlord either. But I have been once, and to this day, I often still think of that meal. Bread, butter, slip sole, new season lamb, just beautiful British cooking."
