1 L chicken broth (good quality)
60 ml white dashi sauce
1 tbsp fish sauce
2 x 90 g dried ramen noodles
1/2 bunch morning glory (or water spinach) (chopped)
Charred spring onion (to serve)

Meatballs

500 g chicken mince
1 egg white
3/4 cup panko breadcrumbs
1 tsp sesame oil
1 tsp fish sauce
2cm piece ginger (peeled and finely grated)
1 clove garlic (crushed)
Sea salt flakes (to taste)
Cracked black pepper (to taste)

Method

To make meatballs, combine all ingredients in a bowl. Mix well. Refrigerate for 10 minutes. Roll tablespoons of mixture into balls.
Meanwhile, bring the chicken broth to the boil in a large saucepan. Add dashi and fish sauce.
Add noodles to broth with meatballs. Boil until noodles are tender and meatballs are cooked through. Add morning glory and cook for a further 1 minute.
Divide ramen among serving bowls. Garnish with spring onion.
