Lovely thing is that nowadays you can get a frozen paella seafood mix, which I often use for this if I don't have the individual seafood ingredients. This recipe is so versatile, as you can use whatever seafood mix you have on hand. If you omit the chorizo, then you have a pescatarian dish.
