Tokay is a sweet, white wine that is made from grapes grown in the Tokaj-Hegyalja region of Hungary. The wine is known for its complex flavour profile, which includes notes of honey, apricot, orange peel, and sometimes a hint of smokiness.

Tokay is made using a unique process known as "noble rot," which involves allowing the grapes to remain on the vine until they are partially shriveled and infected with a special mold called Botrytis cinerea. This mold causes the grapes to lose water and concentrate their sugar and flavours, resulting in a wine that is sweet and rich.

The grapes used to make Tokay are typically a blend of Furmint, Hárslevelű, and Yellow Muscat varieties, which each contribute their own unique characteristics to the wine. Tokay is aged in oak barrels for several years, which adds a layer of complexity and depth to the wine.


Tokay is typically served as a dessert wine, and it pairs well with a variety of sweet desserts, including fruit tarts, cakes, and pastries. It can also be served as an aperitif, and it pairs well with savory dishes like foie gras and blue cheese. Tokay should be served slightly chilled and consumed within a few days of opening to ensure its freshness.
