Sweet vermouth has a higher sugar content and is typically reddish-brown in color, with a rich and complex flavour profile that includes notes of caramel, vanilla, and herbs.
Dry vermouth, on the other hand, has a lower sugar content and is pale yellow in color, with a more subtle and herbaceous flavour profile.
Vermouth is made by infusing a base wine with a blend of botanicals and then fortifying it with a neutral spirit such as brandy. The mixture is then aged in oak barrels for a period of time to allow the flavours to meld together.
