Fish fillets are versatile, tasty, and easy to cook — and they’re much more enjoyable to eat once the fine pin-bones have been removed. These aren’t true bones, but soft calcified ligaments that run down the centre of the fillet. Taking a few minutes to remove them makes a big difference in texture and presentation.
