Beetroot hummus
Chickpeas might be humble, but with a little time and patience, they turn into something seriously special. Add earthy beetroot into the mix, and you’ve got a hummus that’s as bold in colour as it is in flavour. Inspired by the seriously smooth hummus at Esh Pita Bar in Amsterdam, this version keeps things traditional but with a bit of a lift: bright with lemon, a hint of garlic, and blended with ice-cold water for that ultra-creamy, fluffy texture.
It’s the kind of dip that’s good with pretty much everything — piled onto warm pita, spooned alongside roasted veggies, or, let’s be honest, eaten straight from the bowl (no judgement here). Creamy, earthy, and just the right amount of zingy, it’ll quickly become a staple at your table.
