Maple Cinnamon Granola
Method
- 1Preheat the oven to 155°C fan-forced, or 175°C conventional. Line two large baking trays with baking paper.
- 2In a large mixing bowl, whisk together the melted coconut oil, maple syrup, vanilla extract and sea salt.
- 3Add the oats, cinnamon, sunflower seeds, pepitas, almonds and chia seeds. Stir well until evenly coated.
- 4Spread the mixture evenly across the prepared trays.
- 5Bake for 25–35 minutes, stirring once halfway through, until golden and crisp.
- 6Remove from the oven and cool completely on the trays—this helps the granola set and crisp.
- 7Once cool, stir through the dried cranberries. Store in an airtight container.
...And that's it, enjoy!
