Chocolate and Banana Molten Waffles
Method
To make the Waffles
- 1Spoon 1–1½ tablespoon portions of Nutella onto lined baking paper, shaping into thick discs (about 5–6cm wide). Freeze until fully hardened.This ensures a clean cook and that slow, glossy molten centre.
- 2In a large bowl, whisk together flour, baking powder, bicarb soda, salt and sugar. In a separate bowl or jug, whisk together egg yolks, milk, melted butter, and vanilla.
- 3Mash the banana until smooth. Pour wet ingredients into dry with mashed banana and gently mix until just combined. Do not overmix, the batter should remain slightly lumpy.
- 4In a clean bowl, whisk egg whites to soft peaks (they should hold shape but still be slightly glossy and soft at the tips). Gently fold the whipped whites into the batter, using a light hand to keep as much air as possible.The batter will become lighter and slightly fluffy.
- 5Preheat waffle iron until very hot and lightly grease. Spoon a thin layer of batter into the waffle iron. Place one frozen Nutella disc in the centre of each waffle section. Cover completely with more batter, ensuring the filling is fully enclosed.
- 6Cook for 3–4 minutes, before flipping, and cooking for another 3-4 minutes, until golden and crisp.Serve immediately with banana, icing sugar, extra warm Nutella and ice cream.

1/4 tsp bicarb soda
1/4 tsp salt
1/3 cup cup sugar
2 eggs, separated
2 cups milk
60 g unsalted butter, melted and cooled
2 tsp vanilla bean paste
1/2 ripe banana, mashed, extras sliced to serve
Molten Centre
1 cup Nutella (approx. 2-3 tbsp per waffle)
To Serve
Icing sugar
Sliced banana
Extra Nutella, warmed
Thickened cream or vanilla ice cream (optional)
