Buttermilk Scones

Method

    Preheat the oven to 200°C fan-forced. Line an oven tray with baking paper.
  2. 2
    In a large mixing bowl, sift the flour, caster sugar, and salt. Add the butter and use your fingertips to rub it into the flour mixture until it resembles fine sand.

    Make a well in the centre of the flour mixture and pour in the buttermilk. Using a flat-bladed knife, mix until just combined to form a rough dough.

    Lightly flour a bench and turn out the dough. Gently knead until it just comes together. Pat into a 2 cm-thick round disk. Using a 5 cm round cutter, cut out 12 scones.

    Place the scones close together on the prepared tray and brush with the remaining buttermilk.

    Bake for 12–15 minutes or until golden. Serve warm with fresh cream and jam.
