Smashed Cucumber Salad

Method

  1. 1
    Place cucumbers on a board and gently smash them using the flat side of a knife or a rolling pin until they crack. Slice into bite-sized pieces.

    Sprinkle with salt and let sit in a bowl for 10–15 minutes. Drain excess water and pat dry with paper towels.
  3. 3
    In a small bowl, combine soy sauce, rice vinegar, sesame oil, chilli crisp, and honey. Whisk until combined.
  4. 4
    Add the drained cucumber pieces to the dressing and toss thoroughly. Let rest for 5–10 minutes to absorb the flavours.

    Just before serving, top with sesame seeds, sliced green onion, and optional crushed peanuts for added texture and flair.

  • Cucumbers

    • 2 telegraph cucumbers (or 3 Lebanese cucumbers)

    • ½ tsp salt

  • Dressing

    • 1 tbsp soy sauce or Tamari

    • 1 tbsp rice vinegar

    • 1/2 tsp sesame oil

    • 1-2 tsp chilli crisp (adjust to taste)

    • 1 tsp honey or maple syrup

  • To serve

    • 1 tsp sesame seeds

    • 1 spring onion

    • 2 tbsp peanuts, roughly chopped
